Chicken Stir-Fry Recipe:

Ingredients:

  • 1 lb (about 450g) boneless, skinless chicken breasts or thighs, thinly sliced
  • 3 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas, etc.), sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (for cooking)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon red pepper flakes (optional, for spice)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Cooked rice or noodles for serving

Instructions:

1. Prepare Ingredients:

  • Slice the chicken into thin strips.
  • Cut the vegetables into bite-sized pieces.
  • Mince the garlic, grate the ginger, and slice the green onions.

2. Make the Sauce:

  • In a bowl, mix soy sauce, oyster sauce, hoisin sauce, cornstarch, rice vinegar, and sesame oil. Whisk until the cornstarch is fully dissolved.

3. Marinate the Chicken:

  • Place the sliced chicken in a bowl.
  • Pour a small portion of the sauce over the chicken, ensuring each piece is coated.
  • Let it marinate for at least 15 minutes.

4. Cook the Chicken:

  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  • Add the marinated chicken and cook until browned and cooked through. This usually takes 3-5 minutes.
  • Remove the chicken from the wok and set it aside.

5. Stir-Fry Vegetables:

  • Add another tablespoon of vegetable oil to the wok.
  • Add minced garlic and grated ginger. Sauté until fragrant.
  • Add the sliced vegetables and stir-fry for 4-5 minutes until they’re slightly tender but still crisp.

6. Combine Chicken, Vegetables, and Sauce:

  • Return the cooked chicken to the wok with the vegetables.
  • Pour the remaining sauce over the chicken and vegetables.
  • Toss everything together until well-coated and cook for an additional 2-3 minutes.

7. Adjust Seasoning:

  • Taste the stir-fry and adjust the seasoning with salt and pepper.
  • If you like it spicier, add red pepper flakes.

8. Garnish and Serve:

  • Garnish the chicken stir-fry with sliced green onions.
  • Serve over cooked rice or noodles.
