Herb Crusted Chicken with Broccoli Rice

Herb Crusted Chicken with Broccoli Rice


– 2 chicken breasts

– 2 tablespoons olive oil

– 2 tablespoons herbs such as oregano, thyme, and rosemary, finely chopped

– 2 cloves of garlic, minced

– Salt and pepper to taste

– 2 cups broccoli florets

– 1 cup uncooked white rice

– 2 cups water


1. Preheat oven to 375°F.

2. Place chicken breasts in a shallow baking dish. Drizzle with olive oil and season with herbs, garlic, salt, and pepper.

3. Bake for 25 minutes or until cooked through.

4. Meanwhile, add broccoli florets and uncooked rice to a saucepan and cover with 2 cups of water. Bring to a boil, reduce heat, and simmer for 15 minutes or until the rice is cooked and the broccoli is tender.

5. Serve the chicken with the broccoli rice. Enjoy!
