The Buffalo Chicken Wings
Buffalo Chicken Wings

For the Wings:
- 2 pounds (approx. 900g) chicken wings, split at the joint and tips removed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1/2 cup all-purpose flour
- Oil for frying
For the Buffalo Sauce:
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 1/2 cup unsalted butter
- 1 tablespoon white vinegar
- 1/4 teaspoon Worcestershire sauce
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt to taste
Instructions:
- Prepping the Chicken Wings:
- In a large bowl, combine salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
- Pat the chicken wings dry with paper towels.
- Place the wings in a large mixing bowl and sprinkle the spice mixture over them, tossing to evenly coat. Let them sit for about 15-20 minutes to marinate.
- Coating the Wings:
- In a separate large, shallow bowl, place the flour.
- Dredge each marinated wing in the flour, shaking off any excess.
- Place the coated wings on a wire rack set over a baking sheet and let them rest for about 15 minutes. This helps the coating to set.
- Frying the Wings:
- In a deep, heavy pot, heat oil to 350°F (175°C).
- Carefully add a few wings at a time to the hot oil, being careful not to overcrowd the pot. Fry for about 10-12 minutes, until the wings are golden brown and cooked through.
- Use a slotted spoon to remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.
- Making the Buffalo Sauce:
- In a saucepan, melt the butter over low heat.
- Add the hot sauce, white vinegar, Worcestershire sauce, garlic powder, onion powder, and cayenne pepper. Stir well to combine.
- Let the sauce simmer for a few minutes, allowing the flavors to meld. Season with salt to taste.
- Coating the Wings with Buffalo Sauce:
- In a large mixing bowl, toss the fried wings with the prepared Buffalo sauce, making sure they are well coated.
- Serving:
- Serve the Buffalo wings with celery sticks and your choice of dipping sauce, such as ranch or blue cheese dressing.
